1 ripe Avacado, (California variety preferrable)
1 cooked corn on the cob, kernals removed. (White sweet if possible.)
1 chopped, ripe tomato
Lime juice to taste
Salt and pepper to taste

Combine all ingredients and mash in a large bowl. Try spreading it on toasted French bread!

Apple Crepes (6-8)

Ingredients for batter:

1/2 cup of all-purpose flour
2 large eggs
1 cup of milk
1 tbs melted butter
1 tsp sugar

Ingredients for filling:

2 Granny Smith apples, chopped
1 tbs butter
1 tsp cinnamon
1 tbs sugar
1 tsp lemon juice
1/4 cup raisins

Mix the flour and sugar in a large bowl. Make a well in the center of the flour mixture and add eggs, melted butter, and half of the milk.
With a wisk or wooden spoon, gradually stir the flour into the liquid mixture.
While stirring, gradually add more liquid until the consistancy is that of cream.
When all liquid is added, beat or wisk to remove all lumps.

Pour a 1/4 cup of the crepe batter into preheated pan. Cook both sides on low heat until lightly browned.

For Filling:

Melt butter in saucepan. Add filling ingredients. Simmer until juices come out.
Put filling in crepes and either fold or roll up.
